Day three

Vixen’s veggie mash

Sometimes it can be tricky to get your five a day around Christmas time. It can also be difficult to get children to eat vegetables!

With Vixen’s veggie mash, you can have a variety of six different vegetables and maybe successfully hide some so they’re not noticed by those little eyes…

Ingredients:

  • 200g Brussel sprouts
  • 100g parsnips
  • 100g turnip
  • 2 medium potatoes
  • 1 carrot
  • 1 white onion
  • Pinch of salt and black pepper for taste plus any other herbs and spices you like

Tip: Adding a tablespoon of low-fat yoghurt makes it really creamy!

Method:

  • Steam all the vegetables until soft
  • Get a potato masher and manually mash all the veg together or place in a blender or food processor and blend until smooth.
