Banoffee overnight Weetabix
Ingredients:
- 2 Weetabix 
- 1 ½ tbsp maple syrup 
- Splash of milk 
- 100g Greek yogurt 
- 1 tbsp peanut butter 
- 1 scoop (25g) of vanilla protein 
- Banana, sliced 
- Grated chocolate 
Method:
- Crumble up the Weetabix with your hands into a shallow bowl until it’s all broken up. Add in ½ tbsp maple syrup and a splash of milk to create a wet but not sloppy mixture. Mix well and pat down to form a solid base. 
- Create the topping by mixing 1 tbsp maple syrup, 100g Greek yogurt, 1 tbsp peanut butter and mix well. 
- Add in the scoop of protein powder and stir through. 
- Place your sliced banana in a layer on top of the Weetabix base and then top with your yogurt mixture. 
- Top with a few extra banana slices and some grated chocolate and then pop straight into the fridge for 3 hours or overnight.
