Spicy bean hotpot
Servings: 4
Ingredients
- 1 teaspoon of oil 
- 1 onion (chopped) 
- 1 stock cube 
- 1 large potato (diced) 
- 2 carrots (peeled and chopped) 
- 2 celery sticks (chopped) 
- 1 red pepper (chopped) 
- 1 teaspoon of ground cumin 
- 1 teaspoon of curry powder 
- Half a teaspoon of ground ginger 
- 2 tablespoons of tomato puree 
- 1 x 415g tin of baked beans 
- 1 x 420g tin of mixed beans (drained and rinsed) 
- 200ml water 
- Pepper 
Method
- Heat the oil in a medium pan and add the onion, potato, carrots, celery, and red pepper - cook for four to five minutes, stirring occasionally 
- Add the spices and tomato puree, mix well, cook for another couple of minutes 
- Add the baked beans, mixed beans and 200ml water 
- Bring to the boil, cover and simmer for 15 minutes 
- Check seasoning and add pepper if necessary
