Bread pudding

Ingredients

  • 10 slices of wholemeal bread

  • 450ml semi skimmed milk

  • 2 eggs (beaten)

  • 1 tablespoon of oil

  • 1 apple (cored, peeled and chopped)

  • 125g sultanas

  • 1 tablespoon of light brown sugar

  • 1 tablespoon of mixed spice

Method

  • Preheat oven to 180° / Gas Mark 4

  • Cut the bread into cubes and place them in a bowl with the milk, leave to stand for five to 10 minutes until the bread soaks up all of the milk

  • Mix the egg and oil into the bread mixture and stir in the chopped apple, sultanas, sugar and mixed spice - spoon the mixture into a tin and press down

  • Bake in the centre of the oven for 40 to 45 minutes until golden, allow to cool then cut into squares
