Lime and raspberry cheesecake
Ingredients (serves 4):
- 6 ginger nut biscuits (crushed) 
- 200g low fat cream cheese 
- 200g low fat fromage frais 
- A few drops of vanilla essence 
- 1 lime (grated rind and juice) 
- 100g of tinned raspberries 
Method:
- Split the crushed biscuits between four serving glasses 
- In a mixing bowl mix together the fromage frais, cream cheese, vanilla essence, lime juice and lime rind 
- Add the mixture each of the glasses on top of the biscuits 
- Add a spoonful of drained raspberries on top with some of the juice 
- Leave to set in the fridge for 15 minutes
