BBQ Korean beef bowls
Ingredients (serves 4):
- 500g lean beef mince 
- 1 teaspoon ginger 
- 1 teaspoon garlic 
- 1 tablespoon chipotle paste 
- 1 tablespoon light soy sauce 
- 2 tablespoons bbq sauce 
- 1 red pepper (sliced) 
- 4 spring onions (sliced) 
- 1 packet of basmati rice 
- Siracha mayo 
- Coriander 
Method:
- Fry the mince and add the ginger and garlic 
- Once the mince has started to brown, add in the chipotle paste, soy sauce and bbq sauce - add a splash of water if needed to loosen up the sauce 
- Add the peppers and cook them until then soften 
- Heat the rice in the microwave (as per the packet instructions) 
- Add the rice and beef to a bowl and top with sriracha mayo, chopped spring onion and coriander
