Fajita pasta
Ingredients (serves 4):
- Fry light spay 
- 2 chicken breasts (diced) 
- 1 onion (sliced) 
- 1 pepper (sliced) 
- 2 tablespoons fajita seasoning 
- 300g wholemeal pasta 
- 2 tablespoons low fat cream cheese 
- 1 tablespoon oregano 
- Salt 
- Pepper 
Method:
- Heat the oil in a large pan and add the chicken 
- Fry for a few minutes over a medium heat until golden all over 
- Add the onions and pepper to the same pan and fry over a medium heat for 5 to 8 minutes, add 1 tablespoon of fajita seasoning and mix well 
- Cook the pasta according to the pack instructions, reserve 50ml of the cooking water then drain 
- Add the pasta to the pan, with the 50ml of pasta water and stir 
- Add the cream cheese and season to taste 
- Sprinkle with oregano and top with a little extra cheese
